Thanks. What are your thoughts about defense and what tier QB should I pick-up.

Just look at all the players and abilities. See which type of players fit what you want to run. A big point of this game is making your team.

I usually use top tiers on skill players first, like the running backs, quarterbacks, and receivers. Then use other less tiers on one for each positions, if possible. Look at mine for reference down in my sig:

Earl is fun when you first get the game, he makes it feel like an arcade experience because you tap "a" and like in real life he'd make defenders look foolish. Once I realized there was more to running then just shaking of tackles, I had better control of my runner and performed new moves I'd never seen. But yes Earl is cheap as I've found he makes your team 1-dimensional, that can be bad too.
To the poster I would say build a few teams and play around with them. I have found for me the best is to evenly stack the offense & defense so there are less holes in your team making your game speak for itself.

Find players you like. That's the most important aspect.
Do you like to run or pass? Have deep threat receivers or slower possession receivers? Do you like a power or finnesse running game? Do you want your defense to be better at stopping the run or pass? Consider these questions and other similar ones when organizing your team.
I also generally go for a balanced team. Meaning, I spend two golds on one side of the ball, three silvers on the opposite side, and split the bronze three a-piece to each side. (2 Gold = 3 Silver = 6 Bronze)
This is currently my most used team:
GOLDS: Thurman Thomas HB, Mike Ditka TE
SILVERS: Mel Renfro CB, Karl Mecklenburg ILB, Elvin Bethea DE
BRONZES: Ernest Givens WR, Joe Jacoby T, Steve Wisienewski G, Bryce Paup OLB, Albert Lewis CB, and Fred Marion FS.
As you can see, I completely balanced the defense and offense. I also use a generic quarterback in this team. It takes some getting used to, but he manages. Really, go for any level of quarterback.

Its tough with a generic QB as they are prone to throw more INT's
