When the sign on screen appears, hit your GT, then on the next controller hit guest. You be playing an unranked game for this to work.

If you have auto-sign-in enabled you'll need to sign out through the Online Desk and then sign in again in order to select a guest, but yes, you can play co-op in unranked games.
