(I haven't visited here, so I don't know if this has been posted before, but the idea is mine)
If you'd like your career to start off with a bang, choose one of the beginner teams for the career mode (i picked dartmouth).
Before you start your career, go to the Managament menu -> rosters, and edit maybe 5 or 6 players to be really good (i would suggest nothing higher than 85 overall, otherwise they might leave after their freshman year). Since you're in a small conference, you should dominate anyway.
After you've edited your star players, redshirt them. Now their rating will not raise the team's rating, and they will still be available for career mode.
Once you're in career mode, you can un-red-shirt them, and you've got yourself a contender in your first year, the stuff legends are made of.
