When I challenge someone and they accept, it goes to the starting a game screen and stays there forever. The game never starts and I get a message to check this website for a answer or the online faq. Both of which don't answer a thing. Does anyone know what the problem could be?

Its Possible that your playing against people that have defective units,
1 out of 5 Units on launch day were defective and lockup, search, i think xbox-scene had an article with pictures and videos of the crash

This happens to a lot of people i know and it really is unfortunate since online play is the main reason i bought this game. On top of that customer sevice rarely ever answers your questions. The only thing i can say is that connecting directly through your modem instead of a router seems to greatly increase your chances of getting a game.
